The “true Neapolitan pizza” between innovation and consumer protection
The new initiatives of the True Neapolitan Pizza Association
An international road show on the “true Neapolitan pizza” that in March will make a stop in Las Vegas (USA) and Sao Paolo (Brazil) and then travels in Asia (Taiwan and Japan) and Europe. And then the creation of two Registers: one for the Official Suppliers, that will help the pizzerias that are making the “true” pizza according to the ancient Neapolitan tradition to find easily top manufacturers of food raw materials and equipment, optimizing thus the delicate
process of supply, and the Register of Pizza Makers, which seeks to protect and professionalize the pizza makers who “adopt” the International Regulations for the “true Neapolitan pizza”. Last but not least, product innovation with the launch of the “True Pizza”(Verace Pizza) oven, that can also be used only by gas and has been designed by engineers from “Refrattari Valoriani”, a leader in the field.
These are the initiatives that the True Neapolitan Pizza Association (AVPN), has presented this morning in Naples, at the restaurant “Ciro al Borgo Marinari”. “Through these projects – said Antonio Pace, the president of AVPN, - our Association is entering a new phase of its long career, designed to provide new promotional tools and advanced equipment to our 348 associates in 18 countries in the world toward a more effective synergy between the supply chain, food and non-food production sector related to “pizza”, and finally, to judge a category of pizza makers that deserves further consideration because of its undoubted professionalism.”
“The final goal - concluded Pace- is to ensure a more widespread penetration of the “true Neapolitan pizza” and agri-food products of excellence in international markets. It is possible to pursue that goal by accepting, without prejudice, innovation and making vigorous system actions involving the different operators in the sector: pizzerias, pizza makers and manufacturers.”

Valoriani VERACE: the first gas fired pizza oven recommended and approved by AVPN

The Valoriani VERACE is the culmination of 5 years of development in partnership with the principals of AVPN in Naples. The Verace has been tested and proven in Naples - the birthplace of “True Pizza”.
The heart of the Verace is the legendary Valoriani modular dome, already designed to the Neapolitan standard, it’s built on top of a custom ‘softer’ Neapolitan style firebrick floor. A removable plate reduces the arch opening from 11” to 8 1/2”.
With an eye towards the future, a custom Spitfire gas burner system was added with the new revolutionary RHS system which recirculates the hot air in the dome under the oven to create a floor that stays consistent across the entire oven. Available in 120 cm and 140 cm sizes exclusively from Mugnaini Imports.
