This secluded Alexander Valley location is the ideal location to get immersed in the complete wine country experience. The gorgeous kitchen boasts one indoor oven and two outdoor ovens to ensure you the most comprehensive class possible. So, whether you are a beginner or have years of experience, we have a class designed to increase your cooking skills and satisfaction.

The Art of Wood Fired Cooking: demonstration class

Andrea Mugnaini teaches this class beginning with the basics and finishing with a full meal cooked right in front of you. You will experience firing an oven from cold to pizza temperature, witness an expert in action and leave this class knowing how to meet all of the following objectives:

  • How to fire an oven in 90 minutes

  • How to make fresh pizza dough at home with ease

  • How to successfully hand stretch a pizza

  • How to bake a pizza in 2 minutes

  • How to roast meats and vegetables with a live flame

  • How to grill over live coals

  • How to bake bread in your oven

  • How to care and maintain your oven for years of service

Menus vary according to the season and will be sourced from Andrea’s cookbook: The Art of Wood Fired Cooking. Come hungry as a full meal will be served from the pizza oven.

The Art of Wood Fired Cooking: 3 day culinary get-aways

Our three day classes are the ultimate wood fired cooking / wine country experience. Your culinary get-away starts at the Hotel Healdsburg located right off the town square. Three nights of accommodations are provided with daily shuttles to and from the cooking school. The first evening our drivers will bring you to the opening night dinner where you experience the artistry of Andrea Mugnaini serving you a complete meal. The next two days, you are guided through rich menus that reflect the abundance of Sonoma County’s fine meats, poultry, seafood, artisan cheeses, organic produce, olive oils and world class wines. This is a hands-on class that is suited for the beginner or advanced student. Class sizes are limited to ensure personal attention. Some classes have a specific emphasis but a full compliment of oven fundamentals and cooking instruction is provided. You may be coming to this class a beginner but you will leave an expert. This is a true masters course in using a wood fired oven to its fullest. All 3 day classes will demonstrate the fundamentals for firing an oven and cooking any recipe.
