Chef Louis Maldonado to cook Opening Night Dinner at Mugnaini’s 3-Day Culinary Getaway

Louis Maldonado and Andrea Mugnaini Andrea Mugnaini welcomes back Top Chef finalist Chef Louis Maldonado to cook Opening Night Dinner.

Chef Louis gained national attention with his Top Chef appearance and by winning Last Chance Kitchen which sent him back to Top Chef. Louis is also executive chef of Spoonbar and Pizzando, located in Healdsburg.

Chef Maldonado will be showcasing his unique cooking style Thursday night for our first session and returning Sunday night for another 3-Day class. All menu items are cooked on site in a Mugnaini oven.

Tuna, roe and veal on a rice cracker
Guanciale, smoked cheese and herb flatbread
Chicken skins with fermented chili and cilantro

1st Course
Roasted carrots, lemon yogurt, spring onion, mustard greens and quinoa

2nd Course
King salmon, fava beans, salsa verde and turnips

3rd Course
Bone in ribeye wrapped in onion and garlic tops, chanterelles and cranberry beans
