Small ovens may be harder to use. Don't be fooled by big claims--a small oven does not mean "entry-level". A tiny, imitation 24" oven cooks nothing like a genuine Mugnaini Wood Fired Oven. A small fire easily overpowers the oven making it a challenge at best and the results are like it was cooked on a barbecue grill. Our Piccolo 80 offers the ability to bake two pizzas or roast a small turkey with amazing results!

Consider how you will most often use the oven. Are you a one turkey family or two? A larger oven will cook more, but has a longer startup time. Are you a commercial-grade candidate? Both the residential and commercial ovens offer the same internal shape and cooking quality, but our commercial ovens hold heat longer because they are built with thicker components. If you are hosting large scale parties, working with a professional chef, bake multiple batches of bread, or just want the same oven the best chefs like Guy Fieri, Emeril or Mario Batali have you may want a commercial-grade oven.

    Our smallest oven, the Piccolo 80 cooks just like the larger ones with advantages of its own. The small footprint makes it convenient to install indoors with a correspondingly smaller mouth that won't overheat your kitchen.

    If you regularly cook for 2-4 people, the Piccolo can handle all your cooking needs. The start up time is fast and wood consumption minimal. More importantly, it is large enough to use standard cookware and allow you to cook deep inside the oven.

    Andrea Mugnaini requested this oven size especially for the American home chef. Manufacturers never thought to make a small home sized commercial oven. Now homeowners can have the benefits of thermal mass without heating a large oven.

    The Prima 100 has a great all around oven size. True, the extra thermal mass will take longer to heat but that is ideal for bread bakers and foodies who may find themselves cooking several times a week. This oven can be habit forming!

    The Prima 120 is our Estate Level oven - the choice for serious entertainers and serious chefs. Although it is large, our Factory Assembled Indoor model offers a full 48" cooking hearth in a space approximately 5' round! There is no finer kitchen appliance.

    The generous cooking surface can accommodate menus for up to 100 guests yet is still not over-the-top for the serious foodie. The extra thermal mass pays dividends over multiple days of cooking too. This is the same model used at Chez Panisse!

Masonry Assembled are built on your site using concrete blocks with a concrete and sand layer that creates the thermal mass under the floor for deep, even heat. These specifications can be modified with a variety of roof styles to compliment your homes architecture.
