The Mugnaini Cooking School is designed to help you gain confidence through hands on experience in wood fired oven management and cooking techniques.
From the moment you arrive at the Mugnaini Wood Fired Cooking School, located on Andrea Mugnaini’s Alexander Valley vineyard, you are immersed in a one-of-a-kind culinary experience. Entering through the gates of the majestic property, you are greeted at the door of the cooking school with champagne and a warm welcome from Andrea and her canine co-hosts, Elle and Gemma. The beautifully appointed cooking school is housed in a renovated farm house that sits adjacent to acres of wine grapes. Outfitted with the highest quality cooking tools, you are equipped with everything you need to develop your wood fired oven knowledge and confidence.
An expansive patio and outdoor cooking area surrounded by herb beds, vegetable gardens, flowers and fruit trees showcases a variety of Mugnaini ovens. Over the course of your 3-day culinary journey, you’ll work side by side with Andrea to prepare and sample an extraordinary assortment of dishes made from the highest quality meats, seafood, produce and artisanal ingredients.
The Art of Wood Fired Cooking: 3-Day Cooking Class
Our three day classes are the ultimate wood fired cooking / wine country experience. Students learn oven management, roasting fish, meats and vegetables, baking pizza and bread, grilling and desserts. The Culinary Getaway includes an opening night dinner prepared by Andrea Mugnaini and two days of hands-on cooking classes with private transportation to and from Healdsburg’s town square.

You will enjoy three nights of luxury accommodations and transportation to and from the hotel lobby in Mugnaini private vehicles.
Our Thursday – Saturday class will stay at Hotel Healdsburg, Sonoma County’s premier wine country lodging located on Healdsburg’s historic Town Plaza.
Our Monday – Wednesday class will stay at Hotel Les Mars. One block from Healdsburg’s historic town square, Hotel Les Mars evokes the charm of a French maison.
For those wishing to book their own accommodations; we offer a no lodging option. Please be prepared to provide your own transportation to and from the cooking school.

3-Day Cooking Class Itinerary
The Art of Wood-fired Cooking: 3-Day Culinary Getaway
Your wine country get-away begins in Healdsburg California, deep in the heart of Sonoma Wine Country. Hotel Healdsburg is conveniently located right on the town square. You can leave all your cares behind as our drivers transport you to and from the cooking school. You may be coming to this class as a beginner but you will leave an expert!
This is our most comprehensive and enjoyable cooking class program. Students learn oven management, roasting fish, meats, vegetables, pizza, bread baking, grilling and desserts. The value of your Mugnaini oven lies in its versatility. Our objective is to teach you to use it to its full potential and create entertaining menus from appetizers to desserts. Your stay includes 3 nights lodging at Hotel Healdsburg, an opening night dinner prepared by Andrea Mugnaini, and 2 days of hands-on cooking classes.
Day one – Check-in 3 PM
Meet Mugnaini drivers in Hotel Lobby at 5:30 for transport to school for opening night dinner.
Opening night starts as you are welcomed by Andrea Mugnaini and staff and introduced to the beautiful setting of your cooking school. The evening includes cocktails and appetizers as you get to know all the guests in your class group. A multi-course wood-fired dinner follows in the Mugnaini dining room.
Day two – meet Mugnaini drivers in hotel lobby at 9:30 AM for transport to school

Each day‘s class is a hands-on experience and includes a full menu to ensure that all guests receive the experience needed to become proficient with various styles of cooking in their oven. (You have the choice however to do as much or as little as you wish. It is a casual, unstructured environment and you are welcome at any time to take a break, sit outside, sip wine and visit with new friends!). The curriculum for this first morning covers oven fundamentals so whether come to class a beginner or have years of experience with your oven, everyone starts with a solid foundation. A hands-on pizza lesson is conducted followed by a roasting lesson with recipes for fish, meats and vegetables. Fresh loaf breads are baked as well as dessert. Guests dine together throughout the day to enjoy all items cooked along with a selection of Sonoma County wines.
Day three – meet Mugnaini drivers in hotel lobby at 9:30 for transport to school

A greater number of recipes are executed on this day since the oven basics and pizza lesson have been completed the day before. We start immediately to fire all ovens and begin with the recipe prep. Recipes are selected to teach the various cooking techniques for roasting, braising, sauté, grilling and baking; all within a timeline for entertaining. Food items include seafood, a variety of meats and vegetables, breads and fruit to create full multi-course meals.
