Wood-roasted Whole Chicken

• 1 whole chicken
• 1 tablespoon Sale Aromatico

Prep oven per Mugnaini Roasting Oven Protocol.

Wash and dry the chicken. Sprinkle inside cavity with Sale Aromatico and rub the body with olive oil. Place in roasting pan, tent with foil, and set in wood-fired oven. Roast until internal temperature registers 160°F.
