The Art of Wood Fired Cooking: Commercial Applications

Wood-fired pizza ovens are now found in many restaurants and pizzerias across the country. However, many of these restaurants put out product that is indistinguishable from menu items cooked in a conventional gas oven. Sometimes that is due to lack of knowledge and technique but mostly it is due to the oven.

Mugnaini commercial wood fired ovens offer a balanced thermal mass, low vaulted dome and thick Italian fire brick floor that combine to create a cooking environment no other oven can match. Our commercial classes teach you not only how to work the oven but also how to cook using the full advantage of a Mugnaini oven. For that reason our classes are restricted to our oven owners only. Whether you are a beginner or an established chef, we will design your particular training session to increase your proficiency and make your menu items the envy of your competition.

The Art of Wood Fired Cooking: Restaurants and Pizzerie (two day sessions)

The focus of this two day training session is to ensure that you master the management of your oven and maximize its potential for various menu options. Using a balance of demonstration and hands-on instruction, the experts at Mugnaini will tailor your training session to meet the specific needs of your restaurant’s menu objectives. Whether you are planning a menu solely for pizza or a menu that include appetizers, roasted meats and fish, or baking breads and desserts, you will learn the necessary skills for your success.

  • How to fire an oven in 90 minutes or less

  • How to cook during startup

  • How to make pizza dough

  • How to successfully hand stretch a pizza

  • How to bake a pizza in 2 minutes or less

  • How to roast meats, fish and vegetables with a live flame

  • How to grill in your oven with the Tuscan Grill

  • How to bake rustic bread loaves and dessert

  • How to manage your oven for overnight cooking

  • How to care and maintain your oven for years of service

Learn from Rico Felice of Felice Forno Catering and meet the objective of our restaurant/pizzeria class. Emphasis is placed on the special aspects and challenges of working on location.

VPN Pizza Training

The Neapolitan tradition of baking a pizza is revered world wide and is now widely accepted in this country. This class features a full immersion into every aspect of La Vera Pizza Napolitana. Taught by Michael Fairholme of WoodFiredConsulting.com using our Commercial Model 120 oven. Michael trained in Naples and is well versed in kitchen design and the guidelines required to pass certification by VPN Americas.

A wood-fired pizza oven can bring great potential to any winery hospitality program. Whether the installation is indoor, outdoor, or mobile, these beautiful ovens become a focal point for gathering at release parties and private events. Creative menus enhance a wines appeal and attract visitors to tastings, live cooking demonstrations and classes. Andrea Mugnaini will share menus created for various varietals as well as assist you in customizing your special items including pizzas, appetizers, small bites and multi-course meals.
