Pizza Oven or Roasting Oven Environment
- 3 red or yellow sweet peppers, roasted and peeled
- 1/3 pound smoked mozzarella cheese
- 2 tablespoons capers, chopped
- 12 fresh basil leaves
- 2 tablespoons grated Parmigiano cheese
- Olive oil
Slice each roasted pepper into halves lengthwise and lay out on work surface with the insides facing up.
Cut the mozzarella cheese into 6 rectangular pieces.
Place a few capers and 2 basil leaves on each pepper. Top with a slice of cheese. Roll peppers as tightly as possible and place seam side down in an oiled ceramic baker. Sprinkle with Parmigiano and drizzle with oil.
Set in oven and bake until heated through, about 10 minutes.
