      Hi Lee,

      Thanks for asking! Here’s your answer, straight from From the Art of Wood Fired Cooking:

      Peel an eggplant and slice lengthwise or in rounds about 1⁄4 inch thick. Place onto an oiled sheet pan and roast in oven with a large flame (best during the perimeter burn of the startup time), turning to brown lightly on both sides.

      Remove, sprinkle with salt, and drizzle generously with olive oil. Set aside for use on pizza.

    Are these pies mostly sauce free?

      Correct Mike, the marinated eggplant pizza has no sauce. We leave the sauce out to let the vegetables shine through.

      When we are having a pizza party, it adds variety and interest to alternate between white pizzas, tomato sauce, red pepper sauce and no sauce.
