Wood Roasted Corn-on-the-Cob

Serves 4
Pizza oven or roasting oven environment


  • 4 ears fresh corn
  • 1 tablespoon extra virgin olive oil
  • Salt, to taste


Completely remove the husks and silk from corn. Set cobs on a roasting pan and drizzle with oil to coat. Place in a wood-burning oven and roast for about 6–8 minutes, shaking pan to roll ears for even charring. Do not over-char or corn will lose its sweet fresh taste. Season with salt to taste.
