Join fellow oven owners as Andrea Mugnaini teaches our most comprehensive hands-on course nestled in a 30 acre vineyard. The cooking school has one indoor and two outdoor ovens with small class sizes to ensure personal attention. All facets of cooking in a wood fired pizza oven will be covered. Starting a fire, managing an oven for different cooking environments, making dough and baking pizzas are all standard course fundamentals. You will leave with the skills necessary to duplicate these menus as home.

Wild game will be showcased while you work side by side with Andrea preparing a meal from appetizer to main course and dessert, all paired with local wines. With ovens in hunting lodges around the country, many of our clients have felt challenged when it comes to cooking wild game. With proper technique and food preparation these recipes can bring a level of sophistication to your meals not possible in anything but the high heat and moist environment of your wood fired oven.

3 Day Schedule in Healdsburg


Your culinary get-away starts at the beautiful Hotel Healdsburg located on the town square. Three nights of accommodations are provided with daily shuttle to and from the cooking school. Arrival check-in is 3:00 PM. Our drivers will meet you in the lobby at 5:30 PM to take you to the cooking school for an opening night cooking class dinner. The next two days meeting time is 9:30 AM in the lobby and returning back to the hotel at 4:30 PM. All menu items are sourced from Sonoma County’s fine meats, poultry, seafood, artisan cheeses, organic produce, olive oils and world class wines except for a few menu items that may have strayed a little too close to the vines.
